Pedro Aguilar Mendez is a first-generation coffee producer from the Aldea el Pajal region. While collecting only ripe coffee fruits is the most important step in terms of quality, getting rid of faulty beans in each subsequent separation stage gradually increases this quality. This bean, grown at an altitude of 1600 meters, consists of a combination of Caturra, Catuaí, Bourbon and Mundo Novo species. The beans, which are fermented for 36 hours in a ceramic pool, are washed and then dried upside down in the sun for 5 days. Pedro, who is aware of the water shortage in the region, has accomplished a great job in terms of saving by designing a reusable water source. The beans, which are processed with such care, show their quality extremely cleanly in the glass.
